Green Bean Salad with Grainy Mustartd
This dish is inspired by things Mommy has made in the past. I am listing ingredients generally for now, will update them when I make it again.
Ingridients:
Grainy mustard (I used Maille, around 1 tablespoon)
“Normal” Grey Poupon mustard (around 1 tablespoon). Any type of djon or honey mustard would probably be good.
~ Quarter cup olive oil
splash of apple cider vinegar or lemon juice
~1 teaspoon soy sauce
Salt to taste
1 pound green beans
Instructions:
Bring water to a boil with salt added. Blanch green beans until they have turned light green and immediately transfer them to ice water.
In a bowl, mix mustards, cider vinegar, and soy sauce. Then add olive oil and mix until emulsified.
Toss with beans and add salt to taste.
