Gluten-Free Apple Muffins
Just came up with a simple and delicious apple muffin that is low sugar, low carb, and high fiber and high protein muffin which makes everyone happy.
Ingredients:
100g oat flour, ground in blender or food processor from whole oats
130g almond flour
1 tsp baking powder
1.5 tsp cardamom powder
1/2 tsp salt
1/4 cup sugar, divided in half
1 tbsp brown sugar
1 tsp cinnamon
1 tbsp canola oil
2 tbsp butter or coconut oil
5 eggs, separated
1 pinch cream of tartar
5-8 apples depending on size and how much apple you want to stuff into these babies
Instructions:
Shred two unpeeled cored apples using a manual shredder (or food processor if you like)
Mix ground flours with baking soda, salt, and cardamom in medium bowl
Beat egg yolks with 2 tbsp sugar in standing mixer until fluffy and pale yellow
Add grated apples and egg yolk mixture to flour mix in medium bowl, and mix until combined
Separately, beat egg whites with cream of tartar in standing mixer until stiff peaks form
Fold in egg whites, 1/3 at a time, with the egg yolk/flour/graded apple mixture (should look like a thick oatmeal batter)
Core and chop the remaining apples into small chunks, and fry with 1 tbsp canola oil, 1 tbsp brown sugar, and cinnamon until apples are browned and caramelized (a little charred ok)
Line muffin tin with muffin paper and add small dollop of coconut oil at the bottom of each muffin cup
Add some fried apples first before filling a layer of muffin batter
Repeat with fried apple and top with batter as much as the muffin tin will hold (pressing apples down into the batter along the way)
You can top muffins with more fried apples or small pieces of chopped apples (press them into batter)
Bake at 350F for 25 minutes when tops are golden brown
Notes: This recipe is adapted from an apple cake recipe and the muffin version makes it easier to eat as a snack or breakfast treat. The number of muffins you can make depends on how many apples one put in so device your own container and shapes. BTW fried apples made this way is a great way to eat lots of not so prime apples for breakfast.
