Mini Pepper Popovers

Found on sidewalk Fall 2023

Made these for a BBQ when I wanted to bring something and was reminded by the Popovers Grandma made for Thanksgiving/Passover last year. I added pepper to kick the savory up a notch, I think adding cheese in the future would be nice as well. Note that these puff up but then deflate. I think that is ok.

Amounts that I used made 36 mini popovers. This is a lot. I would cut recipe by 1/3.

Ingredients:

  • 7 eggs

  • 2 cups flour

  • 2 cups milk

  • 2 tablespoons melted butter

  • 2 teaspoons salt

  • A lot of pepper

  • A lot of oil

Instructions:

  • Preheat oven to 450.

  • Pour decent amount of oil into each mini muffin cup of the tin (covers bottom). This is the main thing preventing sticking. Might also make sense to oil pan, but not what I did.

  • Put tin on baking sheet and place on top rack.

  • On bottom rack, add baking sheet with water. I think this helps with the initial puff.

  • Melt butter in milk in microwave

  • Beat in eggs

  • Slowly incorporate flour. According to allrecipes recipe, can also use Vitamix for blending.

  • Add salt and pepper.

  • Pour batter into pyrex / plastic vessel (something with a lip for easy pouring.

  • Open the oven, and quickly pour in batter to each tin. Try aiming for about half full in each tin.

  • Bake for around 15 min.

  • I had to do several batches, but will try adjusting quantities so there is only single batch.
