Gluten-Free Italian Almond Cookies
The simplicity of Italian almond cookies (amaretti) is irresistible, promising delicious morsels with few ingredients, gluten free, and easy to make. I tried two different recipes from two Italian ladies on Youtube and decided to combine them to capture the best of each: robust orange taste and low sugar. The diamond shaped cookies above is from the low sugar recipe (mine is even less sugar) and the rounded ones below are from the robust orange variety. Their videos are both very good and worth watching.
Ingredients:
250g almond flour
50g sugar
Pinch of salt
Peel from 1 large orange (not zest)
Juice from 1 large orange
1 tbsp date syrup
1 egg white
Icing sugar
Optional: Orange marmalade
Instructions:
Mix 200g almond flour with sugar and pinch of salt
Chop 1/3 of almond sugar mixture with orange peel in food processor until small pieces of orange peel is still visible
Mix in remainder of almond sugar mixture
Add in egg white, date syrup, and orange juice—dough will be wet
Add in remaining 50g of almond flour until spoon can stand up in dough
Sprinkle enough powered sugar to roll dough into a rope, cut into small pieces, and roll each into a ball
Roll cookie balls in a bowl of powdered sugar, arrange on cookie sheet, and push down to create indentation
Optional: fill indentation with orange marmalade
Bake at 390F for 10-15 minutes
