Microwave Mini Fallen Chocolate Cake

I have been meaning to make this recipe for a few years now. I had period cramps and was really feeling some chocolate cake, so ended up finally cooking this :) I would definitely use 1 ramekin for this batch instead of 2 next time, should probably cook a little longer.

Ingredients:

  • 1/2 tablespoon flour

  • 1/2 tablespoon sugar

  • 1 tablespoon vanilla

  • 1/2 teaspoon salt this is a bit too much, I’d go with 1/4 teaspoon in the future

  • 1 egg

  • 2 oz chocolate

  • 2 tablespoon butter

Instructions:

  • Preheat oven to 400 degrees if you want to use oven instead of microwave.

  • Make ganache in microwave by mixing butter and chocolate. Microwave in 10 second intervals and mix until smooth.

  • In standing mixer, mix vanilla, egg, sugar, salt. Mix until volume has tripled.

  • Pour egg mixture on top of chocolate, then sprinkle flour on top. MAKE SURE CHOCOLATE IS STILL LIQUID AT THIS STEP. IF NOT RE MICROWAVE FOR A FEW SECONDS. Otherwise, cake

  • Fold in until color is uniform.

  • Take a ramakin or glass bowl. Butter then flour inside. Add mixture in.

  • Microwave 1 minute, or bake 10 minutes at 400 degrees.
